Pair by weight and texture
Food pairing works best when the wine and dish feel balanced in weight. A rich dish needs a wine with enough structure or acidity to keep the table lively. A delicate dish needs lift without dominance. Non-alcoholic wine follows the same logic, but service temperature and sweetness become even more important because alcohol is not there to carry body.
Rayner Mansion’s range is built to cover a complete meal: Cabernet Sauvignon for savory depth, Chardonnay for generosity, and Sauvignon Blanc for freshness. A host can pour one style throughout the evening or stage the bottles from aperitif to main course.
Cabernet Sauvignon with savory mains
The 2022 Cabernet Sauvignon is the most structured choice. Its violets, pomegranate, cedar, baker's chocolate, plum, cherry cola, blackberry pie filling, and dusty tannins make it a natural partner for grilled and roasted red meats. Steak, lamb, venison, and herb-rubbed roasts all benefit from a dry red profile.
Vegetarian pairings should lean earthy and savory: mushroom risotto, tomato pasta, lentil ragù, roasted eggplant, and aged cheeses. Gouda and cheddar work because salt, fat, and umami soften tannin and bring fruit forward.
Chardonnay with richness
Chardonnay belongs where the menu has texture: roast chicken, crab cakes, scallops, creamy polenta, corn risotto, and buttery vegetables. Rayner Mansion’s 2024 Chardonnay is marked with a yellow-gold hue and pending final tasting notes, so the safest pairing direction is generous but not heavy.
Sauvignon Blanc with brightness
Sauvignon Blanc brings the table awake. The 2023 Columbia Valley bottling is described as bright in color with stone fruit aromatics. Pour it with goat cheese, citrus salads, oysters, grilled shrimp, sushi, crudo, and herb-forward vegetable dishes. It is also the easiest opening pour when guests arrive before the meal is ready.
